Chocolate Self-Saucing Pudding

Pudding here is more like cake, but with a sticky sauce poured over it. This is a self-saucing pudding, which means it's easy. It's really fast and yummy:

Pre-heat oven to 350F

  • 1 cup flour
  • 2 tsp baking powder
  • 1/4 tsp salt
  • 3 TBSP cocoa powder
  • 3/4 cup sugar
Mix together in a medium bowl. Add:

  • 1/2 cup milk
  • 1/3 cup melted butter
  • 1 1/2 tsp vanilla
Stir together til mixed. Pour into a deep 8-inch baking dish. In a separate bowl, mix together:
  • 1/2 cup brown sugar
  • 1/2 cup sugar
  • 4 TBSP cocoa powder
Sprinkle evenly over batter. Finally, pour 1 1/2 cups hot tap water over the batter. Do not stir. Bake for about 35-40 min until the water is absorbed and the centre is set. It should have a very soft cakey consistency. Scoop out with a spoon, and spoon extra sauce over the top. Serve with ice cream or whipped cream.

You can put this all together (except for the hot water) in advance and just bake when you're ready.
